Below is our list of cake layers, fillings and frostings to create your own cake.  We can help you choose a combination to fit your occasion.

Cake Layers

 

Butter Cake Layers       

  • Moist yellow cake.  The classic American butter cake.
  • Golden vanilla cake.  Slightly dense texture, between pound cake and moist yellow cake.
  • Almond cake.  Made with creamy almond paste for smooth texture.
  • Chocolate fudge cake
  • Lemon cake
  • Carrot cake
  • Red velvet cake.  A southern U.S. specialty, this cake has a very mild chocolate flavor and is dyed red.  Best with cream cheese pecan filling.
  • Applesauce, walnut and raisin cake

 

Sponge Cake Layers

  • Genoise

  • Pan di spagna

  • Nut sponges:  pecan, hazelnut, walnut, almond, chocolate walnut

 

Fillings

  • Fruit purees:  strawberry, raspberry, apricot, etc

  • Citrus curds: lemon, lime, orange

  • Cheesecake

  • Bourbon pumpkin cheesecake.  Best with nut sponge cake.

  • Buttercream in a variety of flavors.  See below under frostings.

  • Cream cheese pecan 

  • Mousse (chocolate, white chocolate, fruit or liqueur)

  • Ganache (chocolate or white chocolate)

  • Cannoli.  Sweet ricotta filling with candied citrus and chocolate pieces.

  • Fruit preserves in a variety of flavors

 

 

Frostings

  • Buttercreams:  vanilla, chocolate, white chocolate, lemon, mocha, Grand Marnier, etc.

  • Chocolate ganache (optional hazelnut paste)

  • White chocolate ganache

  • Cream cheese frosting
